Well, kids, according to those pessimistic Mayans, the world could very well end tomorrow. In light of that, there is only one appropriate thing to be concentrating on today:

Focus your minds on holy things, specifically…
Chocolate.

Just the word itself releases endorphins. I’m in the Baking Portion of the Holiday Season, and around here, nothing says “Merry Christmas” like an easy-to-make chocolatey concoction that probably should be illegal.

Easy as…pie.
I like to include the kids in the holiday kitchen mess-making (partly so I can smile sweetly and say, “You made the mess, you clean it up!”) and this recipe is so simple, a small boy can make it all by himself. Which is super cool, especially because these pies make great gifts for the kids’ teachers and coaches.

Chocolate Chip Cookie Pie

If you can dunk a cookie, you can make this pie.
1 graham cracker crust or Oreo crust (the 9 oz. one-you want the extra serving.)
1 package Chips Ahoy Chocolate Chip Cookies (Maybe two if you’re prone to eating Christmas pie ingredients as you work, like I am. The pie requires at least 26 cookies.)
1 cup whole milk
1 (8 oz.) container Cool Whip (although I always buy the larger size-I’d rather have too much than not enough.)
Step 1:
Dip 8 cookies in milk and arrange in a single layer in graham cracker crust.

A little more Cool Whip…
Step 2:
Top with 1/3 Cool Whip.
Step 3:
Dip 8-10 more cookies in milk and layer on top of Cool Whip.
Step 4:
Top with 1/3 Cool Whip.
Step 5:
Repeat steps 3 and 4. Crumble two cookies on top of pie for a garnish. Cover and refrigerate for at least 8 hours.

The Mayans loved chocolate, and even had a worshiped a Goddess of Chocolate, Ixcacao. As we watch the history of the world come to an end tomorrow, we might as well go out eating pies made by kids and enjoying the precious gifts of God.
